Skewers with grilled vegetables

Ingredients

  • 2 packages of Turkey Skewers‍.
  • 1 medium zucchini
  • 0.5 kg of large mushrooms
  • eggplant
  • 1-2 piri-piri peppers
  • olive oil
  • herbs de Provence
  • salt and pepper
  • hammered pepper

Preparation

  1. Marinated zucchini in oil - cut half zucchini into slices 3 mm thick, put into a bowl, salt and pour olive oil. Then we add hammered pepper and cover with aluminum foil for 15-20 minutes so that the zucchini loses its bitterness.
  2. Serve in a bowl garnishing with piri- piri peppers.
  3. Prepare the skewers on a traditional or contact grill for about 10 minutes. In the final stage of grilling, add a little salt and pepper to taste.
  4. Fresh vegetables: cut the remaining half of the zucchini, eggplant, colored peppers and mushrooms on a slant into slices about 7 mm thick and place them on the grill for a few minutes. When they soften slightly, you can drizzle them with olive oil and lightly salt them.
